Oven-Roasted Tomatoes

Sometimes things don't always turn out how you plan.

That happened to me today. I had every intention of making oven-dried tomatoes. Similar to sun-dried, just roasted in the oven a bit and dried out. But I didn't follow a recipe, and what I wound up with instead were oven-roasted.

Oh well.

They were still pretty tasty, and I ate them on top of some spinach leaves. Not a total loss.

I cut up some cherry tomatoes and then took some olive oil with a bit of dried oregano mixed in and drizzled over the top. Then I put them in the oven for about 25 minutes on 375. What you get is some oven-roasted tomato goodness.

Mini Chamomile Cakes with Honey Frosting

The other day I was browsing Pinterest (of course) and I came upon yet another recipe I wanted to try. Mini Chamomile Cakes with Honey Frosting. I guess it didn't help that I was drinking some hot tea at the time I came upon this recipe.

I was even more delighted to see that this recipe is from Joy The Baker's new book. I've been reading her blog for about two years and have been in love with her style of writing and the recipes she makes.

So of course I decided to attempt. And it was SO easy. Also, I always feel weird posting full recipes to things I haven't made any changes to, and I didn't make any changes to this one. And it was delicious. So if you want to make this yourself, I found the recipe on this blog. And then I fed the cakes to a bunch of people. Who all thought it was perfect. Not TOO sweet, but sweet enough. And all sorts of yum. And smelled amazing. And it's true. The recipe only makes 12. I suggest doubling it to make some more happy friends.

Olive & June

This week, I was invited to the Olive & June soft opening. Olive & June is a restaurant opening to the public very soon (rumor says next Tuesday), from Chef Shawn Cirkiel who also has Parkside and Backspace downtown on 6th street.

After fighting rainy day, post-work traffic on Mopac, I arrived at Olive & June exactly at the time my reservation was for. While waiting for my dinner guest to get there, I ran into Addie Broyles and chatted with her a bit. Later I spotted Jennie Chen, and I think there may have been some people from Texas Monthly sitting at the table behind me.

Once my guest arrived, it was time to really decide what to order and start tasting!



My dinner guest and I started off by ordering a few appetizer dishes. The fried artichokes were amazing. Sometimes when you get artichokes they are breaded and fried, but these skipped the breading, and I was so glad. We also got the risotto balls which were delicious and incredibly crispy. And a polenta dish with an egg on top and mushrooms. It was so rich, but really yummy and the mushrooms added the perfect amount of earthiness to the dish.



Then we ordered an entree and a pasta dish. We both decided that the swordfish with a pistachio topping sounded delicious, and a pappardelle pasta with short ribs and apples and sunchokes sounded great. And they were! That pasta was so good. And the tartness and crispness of the apples lightened up the heaviness of the pasta perfectly. And the swordfish steak was actually cut down the middle to make two thinner pieces, and it worked beautifully. We ordered sides of kale (so good!) and some sort of white beans.

As we were eating all of this.. a few things happened.

1. I made a lot of mmmm noises.
2. I decided kale is actually really delicious.
3. I dropped my dinner fork on the ground (so embarrassing!)
4. I reached down to get my camera out of my bag to take a photo, and dropped it on the ground (embarrassing again!)
5. Remarked about how great the service was and how our waitress was doing a fantastic job.

For dessert we had something chocolatey and layered.. unfortunately I can't remember the name. I am not a big fan of super-sweet desserts, and so this one was perfect. It was very rich, but not overly sweet. Even though I only meant to take one bite, I think I wound up taking four or five before putting down the spoon.

It was such a great experience. I can't wait to come back, especially in nicer weather and sit outside under the huge tree. 

Edited to add: After seeing Michelle's lovely post, I realized that I neglected to mention that the food was complimentary! Many thanks to Olive & June for the invite and encouraging us to try many different things!

Conversation Heart Cookies

Happy Valentines Day!

A few weeks ago, I stumbled upon an image of these conversation heart cookies on the Martha Stewart site. It was such a cute idea, I immediately bookmarked it an decided I would try to make them for Valentines Day. However, her recipe calls for using a stamp kit to stamp on letters. After looking at the prices... I realized I couldn't justify buying a stamp kit just to make these cookies, and piping on the letters would totally work for me.

So this past Sunday, with a few snow flurries coming down out my kitchen window (in Austin!), I made these cookies.

Meyer Lemon Pudding... Well Kinda

(not actually Meyer Lemon Pudding)



I saw a photo on Pinterest of Meyer Lemon Pudding and looked up the recipe and it sounded delightful. I realized I have never actually made pudding before. I don't even think I've made it from a box. But this seemed like a good one to tackle and not too difficult.

One problem.

My grocery store doesn't have meyer lemons. But they DO have lemons and oranges, of course. I was so thankful the recipe gave that substitution. To see the recipe go here - Meyer Lemon Pudding

I topped it with homemade whipped cream and a bit of lime zest. I love zesting fruit. If you ever need some fruit zested, just call me over.

The lime gave it a nice color and a tartness that I liked.

New Portfolio

All through the month of January (and this first part of February), I've been working really hard on my new portfolio. It winds up being a pretty intensive process.

1. Go through a few years worth of photos and choose photos and make sure they don't need any additional editing.
2. Resize photos and sharpen.
3. Save into sections for the portfolio
4. Decide on an order the photos will appear in the portfolio
5. Change mind, scrap some photos, add new ones in, change order
6. Finally upload photos, code new portfolio layout, test everything, upload!

But I'm done! Well.. kinda. A portfolio is never really done.. but I'm happy with it for now.
